		<description>I&#039;ve been buying raw milk for a couple of months now and I have found that it actually seems to last longer than pasteurized milk.  Pasteurized milk will go bad in about 7-10 days -- and I mean &quot;bad&quot; -- smelly, curdled, disgusting, etc. It doesn&#039;t matter whether it&#039;s opened or not.  I haven&#039;t put it to any serious, scientific test, but I&#039;ve opened bottles of raw milk that were at least 10 days old and they were fine.  The cream had risen to the top and stuck to the sides of the bottle and was a bit hard to mix back in, but the milk was fine. 

I&#039;ve read that even after opening the raw milk, it still won&#039;t spoil.  It will just &quot;sour&quot;.  It&#039;s still edible.  It just might not be as palatable as it once was.  But it&#039;s supposed to be perfectly fine for cooking. 

The reason for this is that raw milk contains good bacteria.  The good bacteria keep out the bad bacteria that would otherwise spoil the milk.  The pasteurized milk doesn&#039;t have this line of defense, so it just falls prey to the bad bacteria and spoils.</description>
